Hyderabad: ‘Millets full of nutrients and suitable for consumption’: Asst Prof Dr. Satarupa Ghosh at GITAM
Millets are easy to digest and full of nutrients and therefore, ideally suitable for consumption by every age group, said Dr. Satarupa Ghosh, Assistant Professor, Department of Food Science, Maulana Abul Kalam Azad University, West Bengal.
She was the main resource person for the Webinar on ‘Millets: The Future Food’, organized by the Department of Food Science and Technology (FST), School of Science, GITAM-Hyderabad on 4th May 2023.
‘Millets are gluten-free. It has very high nutritional values and is a good source of energy, carbohydrates (65-75%), dietary fibers (15-20%), fats (2-5%), and protein (8-10%). It is also a rich source of vitamin and mineral content.
It acts as a pro-biotic feeding for micro-flora in our inner ecosystem. Millets consumption decreases triglycerides and C-reactive protein, thereby preventing cardiovascular disease’, Dr. Satarupa explained.
She narrated that, the millet helps in the repair and development of body tissue, lowers the risk of diabetes, helps in avoiding gallstones, prevents breast cancer, and good for weight loss.
Millets are traditional grains, grown and consumed in the Indian subcontinent from the past more than 5,000 years, Dr. Ghosh said. She answered the queries raised by the students.
